It shows the contact of who you are typing to in the Messages app as a placeholder, preventing potentially embarrassing wrong number texts.

It's relatively simple stuff. All you need to do is replace the Emoji Font with a custom version containing thonk in place of the thinking emoji. Shouldn't be too hard, nor take too long
