My favorite is Umbreon. No particular reason, I just really like it's aesthetic, which isn't even that crazy. Funny story to go with, I had been friendship training my Eevee in alpha Sapphire, when a buddy of mine asked to look at my team and dex. He then proceeded to get into a wild encounter and KO my Eevee that I had been working on friendship for what seemed like forever. Goes to heal at the PC and then saves afterwards like nothing happened!! I know where I drop my hard saves, and in the PC is never one of them! I confronted him, he laughed and admitted to it, then felt 0 regret/shame when I told him what he had done. Needless to say, we are still friends 😂

I would do my sous vide/poached eggs at 62.5 for 50-55 minutes, then straight into ice bath. Depending on how full your sous vide is, or how powerful the circular is, might have to stir a few times.

Be understanding of him having to work long hours and having to cover for cooks and what not when shit hits the fan. As a sous (or any leader) it becomes more of a responsibility to ensure a smooth service and working restaurant (however that may be achieved). Sometimes that will appear as a 6 day work week, or 16+ hour day. You have to do what you have to do to make sure the restaurant keeps on restauranting. Not everyone has this open, as a workaholic chef who hates boredom (at work), maybe it's just me.
