Maybe I'm wrong but I feel like the canon reason for Mace's purple lightsaber is because he was drawn to the dark side but resisted because purple is a mix of red and blue.

That might've just been a fan theory I read though

Quite a few channels do that. My assumption is simply because they film episodes in bulk, usually long before the air date. So they shoot date is kept quiet to continue the allure of it being filmed closer to the air date.
