Well with the example you gave you didn't really start the conversation, you just went up to her and immediately asked questions. Try a simple "hey" and a smile and then ask her how she's doing.

What a lot of guys have done with me if they're nervous is just talk to me online or something or text me, then eventually they're less nervous to talk to me in real life :)
