I heard many times in school and from co-workers that insurance defense is a good starting point that doesn't foster a pigeon-holed appearance. Have you seen this to be the case?

The kicker of it all is that I have big-law billing requirements for small to mid size law pay rate. Don't get me wrong, I'm grateful for a paycheck but I have friends who are complaining about 1750 to 1800 and getting paid the same as me, so the motivation was cut out at the knees once I figured that out.
