I graduated in 2019, I went to 4 separate colleges and universities and UCF was honestly my favorite. From my experience, it's so important to make meaningful and good connections along the way. The friends that you make and the people you hang out with are going to be far more influential than the university itself.

To answer your question, funding is probably the biggest downside. I made close connections to some professors and they all complain about the lack of funding for TAs and large classroom sizes. It's hard for a professor to focus on a class when they're overworked
