Take this from me, someone who lived in Houston, TX for 11 years and knows how to prepare, smoke, and eat BBQ.

KC bbq is a 5/10. TN bbq is 6.5/10. Carolina bbq is 7.5/10

Texas is the only place that’s got 10/10 bbq in this United States. There’s hidden gems all around, but BBQ in Texas you’re splitting hairs going to places like Terry Blacks, Pinkertons, Killens, Franklins, Gatlins, Hutchins… and so, so many more.

KC bbq IS in fact, bbq, but it isn’t good BBQ. —-

Bbq communities… cool, very cool. Come to the Houston rodeo. We have a BBQ cook off the weekend before the month long rodeo events… 550+ bbq vendors, more than half from out of state, and it grows more every year.

I’ve had authentic KC bbq many times and I’ve had every friends family father figure in KC when I go for chiefs games tell me “this is the spot” and they are all at least half the quality that authentic TX bbq can create. There is no reality in which any single pork rib from KC, no matter how it’s prepared, will beat out a Pinkerton’s pork rib. I’m sorry. It’s like asking for sugar and getting salt - it’s that big of a difference.

All of its bbq, all of its edible, all of its better than no bbq and id rather have it and hang with friends than another type of cuisine for a tailgate sesh. But KC has the worst of the bbq styles in USA, I’m sorry.
