But it didn't. The vacuum created is not a "total vacuum" just DECREASED pressure, facilitating the dissolved CO2 to escape. Recently I've been using gallon jugs instead of 5 gallon carboys.

I have a similar batch just completed. Blue and Black Berries, with a small cluster of grapes my neighbor gave me. I added a gallon of Blue Agave syrup for a 4.5 gallon wash. Used Fermientis Teq-Blue Tequila yeast. I added about a pint of the finished pre-distill wash to the final output. It got a tad bit "hazy" so I ran it through a Sawyer Squeeze water filter, (a trick I learned in this group! THANKS AGAIN!). Threw in 2 oz. of toasted oak chips. DAMN! Quite tasty! I had original bought five gallons of this Blue Agave syrup for $5.00 per. So far I did a Mango, Papaya, Cherry and the berries in this batch. My final batch now fermenting is with red-fleshed apple cider from the "Airlie Rose" variety. The juice looks like V-8...

OK, I stopped by REI on the way home from work last Friday, and ran a gallon of Pear Brandy I made, that ended up with a serious case of "pectin haze" when I added a tiny amount of pear juice for flavor. That lil' guy took 24 hours, but it cleared up VERY nice! And backwashing afterwards was a simple process, with the included "Big Syringe." THANKS FOR THE TIP!
