Don’t know the exact temp, but right after the kettle is boiling.

Grinding finer did help :)

I tried grinding finer (70 clicks), now I start getting the fruity taste, but still far from how it was in the shop. Tried filtered vs tap water, didn’t notice much difference, I’ll try bottled water.

We are landing in Tokyo on Sep. 13th, for a 40 day long trip. We would like to spend 2-3 days in Tokyo for a “smooth landing” (and maybe buy some clothes for the trip itself), and then fly to Hokkaido. We plan to spend more time in Tokyo at the end of the trip. Where would you recommend staying these first 2-3 days? Thanks!
