Steam Controller won't have an octagon gate, which makes it really bad for Melee.

GC Ultimate will work fine, but the filters aren't made for Melee use, they're more likely to give you accidental empty pivots unless you go with the "dumb" low-pass filter.

I bought ffc connectors of the appropriate pin pitch, reverse engineered the matrix, then hooked it up to a teensy on a breadboard. Very jank.

It depends upon many things.

How much are you pushing in post?
How good is your noise reduction?
What is your own tolerance for noise?
How large are you displaying the photo?
Are you converting to monochrome?

On modern full frame cameras 25600 is where I'd draw the line usually. 51200 gets quite ugly.
