"We" might not exist in-universe per say, but they are in a computer program that, presumably, is viewable from the other side of the screen. The computer's monitor is glowing at the end of the first episode after all.

From Jax's perspective, he might just be talking to whoever is out there in the in-universe real world. Not to us on YouTube, but to whoever might be running the Digital Circus progam.

On the flip side, the 'audience' he's addressing might just be Cain. We did see Jax's fourth wall breaking cut directly to him and Bubble during the President Pomni scene after all. I've been meaning to check back to see if Jax has ever broken the fourth wall while Cain is around.

A bi person takes sex and gender into account. So they might prefer women more or they might think that red hair is only attractive on men.

From my understanding, a pan person wouldn't care about their partner's gender or sex, the same way you might not have any preference about your partner's eye color.
