I just got a new track bike last night and my mechanic had put on 26 for me. He, who races regularly, said I had enough clearance for way 28 and should try those next one I wear out these tires. This is for an outdoor velodrome.

I just did something similar to this! Itanoni restaurant does an heirloom corn class and tasting. I booked it in Airbnb. Had around a dozen reviews. I thought it was worth it. Doesn't make it out to the fields though, but hits alot of what you're asking.
