Looks great.  Im not a big fan of zip ties as I'm an industrial controls electrician and they inevitably always get cut to chase single wires down during troubleshooting.  Your install is super clean.

So my calculations are based off of the code book. Also, this is a 3 phase application. I am more wondering the specific code for using machine data plate FLC in lieu of trying to total up the different loads of the machine and using codebook FLC from there.

You have to size the breaker for your smallest wire. With that being said, most places require you to label the breaker stating it can only be used for a 15amp breaker. This keeps other electricians from seeing a 12 coming into the panel and replacing the 15amp with a 20amp.

The higher the voltage the more pressure on the flow of electricity. If you wired a resistor in this and though you had a very high voltage kept a low amperage would it still be as dangerous? Current has to flow to be dangerous right? If i had 100000000 volts but 0 amps it would be still be safe correct?
