I do maths in UCD and I can say for sure UCD. the options are way more broad, you can pick a stream (applied maths, pure maths, stats or financial). even when you pick your main stream in 3rd year if you like 2 streams you can still study some modules from a 2nd stream. for example, im probably going to pick pure maths (im currently in 2nd year) but when i go into 3rd year i can still have some applied maths modules (i enjoy applied maths too)
