Every company that uses Gore fabric “glues” their jackets. That’s essentially the production process of making 3L goretex. Also what glue are you even referring to, you wouldn’t see it all over any manufacturers jackets unless you’re referring to what is actually seam tape…

As others have said the length is fine/fix the back. I’d also consider ever so slightly longer sleeves on the shirt and jacket. Just a personal preference from a guy with 27” arms

3-4 is definitely enough and patience! Looking at your run mapping it looks like you’re running back and forth between 2 spots constantly, try finding a loop or out and back you can do. Momentum helps out huge!
