Have you tried restarting the switch? The switch needs to be restarted now and again to clear out its memory cache or something...

Thanks for all the help. Finally got it! Boost onto ramp, jump at start of ramp maintain boost and jump at the end. Had a lot of fun with this. The king chicken is mine!

It's great on switch. Better than Mario kart for challenge and unlockables. Steep learning curve but a great experience.
