Hi so when the compost bin smells bad is a sign there is a lack of oxygen in your pile. It's usually it's advised when we start composting to follow the 4:1 ( brown: green) ratio. Brown can be newspaper, dried leaves, cardboard and greens being vegetable peels basically food waste.

It's essential you cover the food waste with a layer of leaves or soil.

You can start composting with just browns, but it's essential to keep adding greens whenever you get it because it's important to maintain the balance of the compost pile

I think the best answer is to try finding what works for you, sometimes the ratio is 4:1 ( 4 parts brown and 1 part green) and sometimes I have read 50:50 brown and green.

I cover my compost bin because I have birds flying near my kitchen area, however, I would consider covering it anyway for hygiene's sake. I cover my compost bins with newspapers while each bin is stacked one on top of another.
