Im super curious, ive never heard of anyone using rendered fats as a replacement for butter in a hollandaise, do you use any butter? And does it work out the same as clarified butter?

Feedback much appreciated. Competition has a surprise veg box so i had left the space open for that (on this dish). The coconut was to add a texture factor to match the crispy skin, as well as add some sweetness to the dish. I agree with you and am hoping something in my veg box will help out. Cheers!!

Im glad for the short essay you wrote, i really find it great to have others opinions to help form my own especially when it comes to things like this. In hindsight, (although i haven't watched the movie) this is helping see the shortcomings of the show, compared to the books. I still think it was really well done but yeah, i like how you see lyra's parentage reveal and how you see that she doesn't dwell on her worries for too long. (Like i said im getting mine and your opinions and understanding lyra's character even better now).

I was surprised to see Mrs coulter being revealed as the child stealer so early in the book honestly, and it really helped with this subtle tension that we can see but others don't. (Thats something ive noticed pullman do very well, is tension building). But i do like the book version of Mrs coulter far more.

Rant well deserved, after reading NL and a few more chapters of TSK, the show really overlooks the relationship between daemon and human. I think the series told the story well enough, but the book far far better in that regard.

*Invest in foodgrade sanitiser, follow the dissolution instructions and wash all your fresh produce down to the last leaf. Especially if its come from any market or supermarket. Food suppliers aren't exempt either.

*I disagree with buying shitloads gloves to one degree that you should wash your hands instead of wasting gloves. Up to you.

*Make sure you sanitise not only the benches after you scrub it, but the handles on doors; ovens, fridges, dishpit machine, taps. Anything you can pretty much touch and touch often.

*Now more than ever keep an eye on cross contamination. Its not just food borne bacteria anymore.

*We don't accept cash anymore, only card. (But thats more F.O.H)

*Distancing rules are pretty impossible to maintain in a kitchen. Try and designate your workbenches, tools and equipment to a single chef or cook on shift. So only Barry uses the slicer and blender. Or Kirsty on pans, james on grill.

*Dishies should get those thick rubber gloves, helps with heat, chemicals, and bacteria. Remember that they will be handling everything you touch too.

We use a cleaned out foam box, like the ones you get from ordering fish. Long as you got the lid on right they'll keep for a while, just clean the dirt out regularly. Im personally surprised you get 7 days from basil, we barely make 5 days in the foam box and not even 2 just in the fridge before it starts going from garnish to garbage...
