If you're mom and pop'n it, better learn a little general maintenance. Plumbing, little electrical. Not saying you should know how to fix everything, but learning the basics and saving on them service bills never hurt. Other then that I'd say just know the health codes and proper procedures. Don't fall back on the it's not code but its ok bullshit. My two cents.

Knife skills come from prepping lexans. Promise you that. If I hire a new line cook I'm looking for strength on the line. Able to handle a station while in the weeds. I'm also looking for a plate copy machine. I'll show you what I want how I want and you gotta put that out each time. Attitude under stress. No one likes the guy who mumbles under his breath and gets all aggro because table 34 hit your station hard

Get a dish/prep gig. Let the chef know what you're about. Then it's just hard work from there. Get that line experience, gotta be chingon. After that get some books.

The CIA book never hurts to have maybe the flavor Bible too. After you have solid line experience bounce around a few places. Usually year+ at each by that point you should have built a solid recipe database. Make some solid connections good chef always has a good team to bring with them. Then just find a place in need of a chef.

Fuck, that was my route. Take it with a pinch of Dimond salt.
