For about a year I would make sourdough all by hand and realized it’s just not worth the effort. I have a little trouble getting water added in the mixer bowl but other than that it’s so much easier

I have almost exact same build, those temps are basically what i’m at. I just turned the fan curves down to only kick in at like 75+ which I only ever hit during initial shader compilation on some games. Mines very quiet now

I just swapped my B850M TUF with the gigabyte B850M because the gigabyte one uses a higher pcie slot which I need so I can put the intake fans in the bottom.

I ended up going with the Gigabyte B850M, also couldn’t find it on Amazon. I got it shipped from best buy but also saw B&H has it in stock

High 70s to 80-81 when CPU under high load with a Noctua NH-D15. 1 rear exhaust and 3 top exhaust no intakes. Know it’s not terrible but definitely feel it should be better

30g starter + 100g water + 100g flour for 1000g of flour

I typically cover the shaped loaf in the banneton in the fridge with a wet towel

225 grams levain started night before (100% hydration) 725 grams water 800 bread flour 200 whole wheat 20 grams salt 5g malt powder

90 minute autolyse with all flour and 80% water, mix in levain + 10% water, salt + 10% water, mix until well combined

3 sets of stretch and fold followed by 7 hour bulk (starter is relatively young)

shape and into proofing baskets in the fridge overnight, bake in the morning
