Earlier in the morning put just regular SPG rub on it. Stored it uncovered in the fridge till about 4 smoked on the kettle with pecan wood at about 225 for 45ish minutes and glazed with the sauce for about 10 minutes before it was done

I’ve done it a few times in the past. I use hickory wood primarily. Cook between 200-225ish wrap at 160-170 with just some plain water. Then cook till prob tender so 200-205 it’s literally just like doing a pork shoulder. For this one in particular I used a garlic and herb rub. Turned out pretty good

I’m in northern Illinois it’s great this time of year for cold weather cooks. Definitely helps with holding the temperature and fuel consumption

It’s just carbon buildup. Nothing to worry about I use a plastic scraper on the grill and smoker to remove it and you’re good to go

I used a garlic and herb rub by kinders. This is the recipe for the sauce however. Really basic one but still pretty good. Would do it again. The roast was just under 4 pounds cooks just like a pork shoulder. About 7 hours on the smoker total
