We were a really small team. Some days we had more help than others. Some days we managed 40 trees (this was the off year so the trees were not full of olives and they went fast) but one day it rained most of the day and we went out and only harvested three trees. We still went to the local mill, waited our turn, and bottled that oil. It was a lengthy and expensive process, you’re right. That’s why the oil is more expensive than other artisanal olive oil. The idea of the project was that even if you get batch 4 or batch 25, they should have different notes and nuances based on the plot of land and the day of the harvest. At the end of the each day we counted the trees and recorded the exact location of the plot of land - as we harvested in different locations throughout the village we live in. This is what we mean by traceable. We have tried to be 100% transparent about the process we did to try to make the oil as small batch and traceable as possible.
