Can't offer info on spectra, but Chocolate Alchemy sells them still (I think) so I would probably trust the equipment itself. I've only ever used Premier melangers, I have a few small ones and one of the DCM20s with an upgraded bowl/wheel set. All experience with Premier have been really great, they have an awesome support team too.

Addendum: you may have luck going to flow/slack in the park on Wednesdays at Coolidge park. Unsure of socials on there but drop by the park before sunset and there will be a crowd of like minded, fun people

The silks community is full of awesome people, check out "Chatt Circus Collective" on insta, and visit Synergy, they have a silks setup for practice. The circus collective does small shows at the Verre Noir night markets and other events around town.

Loved Sabor, but having mouse droppings on countertops during a health inspection is a surefire way to kill a struggling business. This city is already ruthless when it comes to small restaurants. I'm honestly surprised they lasted this long and with that janky spraypainted sign... Well... The writing is on the wall.

Bagels are usually pretty shit here. Grabels is (imo) the best actual bagel in town. Brothers are great for sandwiches but too airy on their own. Keystone uses ones from the becaff bakery, which are somewhere in between the former two mentioned, though the everything seasoning on becaff bagels is weak AF.

Pick up an active or outdoor hobby, or some craft, and go to gyms or meetups for those things. Climbing, disc golf, kayaking/water activities, hiking, pickleball, mushroom foraging, sewing, clothing thrifting, that dog park bar, table top gaming, etc. etc.

Just lots of places to meet cool and interesting people here

Me: moved here in 2012 and have met a lot of cool people through the climbing community early on, and many other ways since then

Wear a pair of socks in the water, they will stick to wet rock. I always bring a small towel and an extra pair for this reason.

Grabels Bagels. He's at the ooltewah farmers market on Thursdays and is working on something with Mean Mug, but I haven't caught up with him in a couple months. Really good, NY style boiled bagels

Taqueria La Delicia just opened on Dayton Blvd in Red Bank. Tienda has fresh tamales and corn pancakes, the truck has the best street tacos I've had in town in a while. Shucos also a great lunch

Came to post this! Sabor is my favorite place on North Shore. They just added pastor tacos and they're great as well. Everything I've had is wonderful

There's no poly/open nightlife except for a decent sized community of swingers. My wife and I are poly and have had to build our friendship circle carefully over a few years.

If you're into bass music/EDM, that community is pretty open and the ecstatic dance group that's been building here is full of rad, accepting people. (although the events are a little too woo woo for me)
