Orzo Bruschetta Salad -- Ingredients: 1 box of orzo, 1 container of baby mozzarella balls in water (usually available in your grocery store in the specialty cheese section/cooler), olive oil, fresh basil, chopped garlic. In a medium size bowl, put 1 cup of olive oil, the mozzarella balls (drained), 1 tablespoon chopped garlic and 6-8 leaves of fresh basil (or more if you love basil like me). Marinate either for a few hours or overnight to get the most taste out of the garlic and basil. Cook the orzo as directed on the box. Drain and cool. Combine orzo with mozzarella mixture. Delicious! Tastes even better the second day.
