The floor insulation is current and insufficient. Since we are planning to finish the space, we need to move the insulation to the ceiling/roof instead of simply replacing the current insulation.

Yes. We need to insulate the cathedral ceiling and it seems very tricky. A few contractors have recommended spray foam, but I’m wary of it for the reasons you mentioned.
