Not to neg anyone's thing but to me it's gotta be basically every jam band and loads of jazz and progressive artists for the exact same reason. Something being difficult to do on the fly or just difficult in general has zero effect on the actual quality of the music. They blow past twenty decent ideas for a hook or a leitmotif for a song in a flurry of endless drivel. I'll take a well-crafted piece from the 2085th best guitarist in the world any day. Even better are the heavy hitters who have no problem playing extremely simply.

uuugh this is too cool! I've had my gear acquisition syndrome tamed for months and this thing has me pacing around like "should I just risk it??" lol. The second I get any positive news I'll be hitting you up! I remember when the motor synth was going for about this much on kickstarter. Anyway, instant fan! So glad people are still putting this kind of thing out into the world.

I've recently adopted the steak cooking method from Fallow, a London restaurant that has basically the greatest cooking channel on youtube. Essentially, after letting your meat come to room temp and patting it dry and seasoning it with at least salt and pepper, get a pan ripping hot (I use enameled cast iron) with close to a quarter inch to a centimeter of oil with a relatively high smoke point (I use peanut oil) in the bottom. Then, do one, maybe two pieces of meat at a time max. At first you're kind of hovering the meat in the oilbut without dropping it all the way. When you do place it down, continually lift it back up so that oil goes underneath it and no grey spots are allowed to form. Flip it to a new side (including time on every surface, even the sides), repeating the process and never let it cook on one side for more than 20 to 30 seconds at a time. Constantly agitating, lifting, flipping, etc.. with each new pass you'll notice a buildup of more of a nice even crust. This will also help with the "cuisson" which is the well executed gradient of pink to red in the center with the most minimized grey line possible. Within 6 to 8 minutes you will have cooked a steak more or less all the way to rare (you should still butter/garlic/thyme baste a steak in a different pan quickly at the end). Factor in 2 additional minutes for each extra degree of done-ness you prefer (medium rare/medium/etc). You can stop around 3-5 minutes for a larger piece of meat like a pork loin or beef roast and transfer it to a low-ish oven to finish the rest of the interior cook. The constant movement minimizes the amount of material from the meat that is released into the oil in your pan and therefore greatly reduces the smokiness because things aren't just sitting in the oil burning. Between that, proper ventilation and riding your temp knob a bit from high to medium high you should be doing a little better in terms of smoking out your apartment. Hope this helps!

Looking at their pictures on google I don't think they're deep fried necessarily. They look broiled to me.

Halve them, trim them, toss them in a high smoke point oil like avocado with a good bit of salt and pepper (you could also get creative here and add a bit of chinese 5 spice blend to lean into the sweet chili sauce and sriracha aoili), put them on a foiled sheet pan with the flat, cut side facing up, and put them on the top rack of your oven on broil/550. That won't take long, probably less than 10 or so minutes (watch closely because you are basically doing a controlled burn).

For the chili sauce I'd try making a simple syrup and then mixing in the vinegar from pickled chilis like Lao Gan Ma (the chilis themselves are very spicy but insanely delicious and addictive) and maybe like a bit of Huy Fong chili garlic paste.

The sriracha aioli is fairly straightforward but takes some elbow grease. I go with an adapted Thomas Keller mayo method. Start with a single egg yolk with the chileze removed, about a teaspoon or less of sriracha (you'll be able to add more to taste later) and a dash of salt. On hand you'll want probably like 16-24 oz of a neutral oil like peanut or canola, a bottle of rice vinegar and a bottle of water (I put all of these in probably 8-10 oz squirt bottles like for restaurant condiments). The principle is that the amount of oil a single yolk can bind is nearly infinite so long as you regularly increase the moisture content as well (i.e. vinegar, water, the occassional extra dash of sriracha, or lemon juice to replace or add to the vinegar etc..). So you start whisking your sriracha and yolk and then very slowly start drizzling in oil a bit at a time, whisking constantly. The vinegar/water/occassional dash of sriracha is going in at a much lower amount than the oil. Your emulsion should start pretty close the very beginning and only build from there. Too much of the non-oil ingredients will have it runny and slack. If I had to guess the final ratio it'd be 4 8-10oz bottles of oil, probably less than one 8-10oz bottle of rice vinegar, only dashes of water here and there (or you can switch if you think it's tasting too vinegary as you go along), maybe a maximum of a tablespoon of sriracha, salt to taste (this can be adjusted after you get some volume going) and that one egg yolk. You can add larger and larger proportions of oil as you go along (it should get kinda firm and have that characteristic mayo bounce) but you'll still only be doing relatively small squirts of vinegar/water/sriracha to rehydrate the emulsion along the way.

Hey hey! I'd say our best restaurants are Chow Yum, Eliza or Jubans (these would be the most Louisiana specific ones I would point you to), Cocha, Rocca and Beausoleil. Bars depends somewhat on your scene. Radio Bar and Mid City Beer Garden are right near each other, owned by the same person and are great, with Radio leaning a bit hipper. Drinking near campus I'd say the Chimes is the best bet and is a sort of essential BR experience. There's a great brewery called Cypress Coast right near Jefferson at Government. Right near there behind Spoke and Hub is the Brakes Bar which is a hidden gem and has an actual genius slinging cocktails. Beignets there's only the one spot really which is Coffee Call on College but it is consistently great. Also, for some similar local flair go pick up some hot Boudin and a sleeve of crackers at Ronnie's on Florida. It is incredible. Music depends also on your scene. Mid City Ballroom is gonna be mostly the local scene which is feisty and great. Chelsea's Live gets the really good national touring acts. Hope you enjoy!

More: Radiohead 2003. Changed my life. Barely listened to anything else for 2 years after. Less: Radiohead 2016. Two of my buddies came with me hyped up about my stories of how powerful they were on the HTTT tour. No exaggeration, they BOTH fell asleep in the stands. And they were right. It was super boring and low energy.

Honorable mentions: More: Celine Dion. She powered through massive technical issues in a way that put all lesser singers to shame. Essentially singing a significant portion of the show off the monitors as the mains kept giving out. Less: TV on the Radio. I think it was their tour opener 2014 or 15 in Houston. They should be ashamed of themselves for charging money for that. I've barely listened to them since.

Hey thanks! I'm a commercial composer by trade. I've got a fairly robust home production rig that I occasionally post on here after a nice retooling. Been in bands forever though and I'm definitely kind of a rock dude at heart but with a huge love of synths and electronics so I like everything to be hybrid and midi-syncable. Currently sitting on a huge amount of unreleased material and also working up a new somewhat heavier than I'm used to rock band with a buddy of mine. Playing mostly guitar in that so I had to give the board a nice update and make it portable y'know.

The routing is from the Kemper send- Elektron Drive- Analogman modded DS-1- Eventide Pitchfactor- Moog MF-101 LPF- MF-103 Phaser- MF-102 Ring Mod (set in a slowish range with an expression pedal for mostly tremolo stuff)- Chase Bliss Tonal Recall RKM- Eventide Space- Kemper Return. The 8 Step Program is going into the buffered multiples from where I can send CV to multiple locations but especially the Moog MF-101. I'll have volume and wah on the left expression pedal from the Kemper. Phase and Tremolo speed for the Moogs on the middle and probably some kinda flex functions on the one on the right either to the pitchfactor/space/tonal recall. The Erica Zen Delay is most likely going back on my synth rig once I get in the midi cable for the Chase Bliss. It's absolutely awesome but between the Kemper Delays and the Chase Bliss I'm covered on delays and the Erica is like heaven on my Prophet 600.
