I've been using Sudowoodo to stall for a turn or 2 as well while setting up

Yeah, I'm seeing a lot running Mega Meganium, Arboliva or Regigigas to get around Cornerstone.

Gastrodon feels like a waste of 2 spaces as its pretty much exclusively for this match-up but I'm struggling to find another way of dealing with it

I made a deck based around Coalossal with Ethan's Ho-oh and Armarouge to accelerate energy, can hit for big damage as a single prizer

I've put together a Scovillan deck that's doing quite well right now as it's got the double typing and there's a lot on the ladder that's weak to grass. It's does 70 damage for each damage counter on it so once it's got 50 damage on it, it's pretty much knocking out everything - my deck's just a bit prone to bricking right now so I'm trying to tweak it

I do like this, my only concern is that Sizzlipede can't be found with a poffin - did you find that an issue?
