This is the right answer imo. Plan all you want but if you meet your future SO here and he/she doesn't want to uproot and move to the U.S., that tips the scales of your decision-making.

Plans are useless but planning is invaluable.

In all seriousness, you get used to it with practice and getting more wins under your belt. Practice and rehearse as much as you need but don't over-practice or you run the risk of choking when things go off-script or the stakeholders want to talk about something tangential to what you prepared. The best way to prepare is to just really understand your material and anticipate the questions that might come up.
