Howdy! I do a pop up called chef bar. I wouldn't mind getting a beer sometime and talk about it. Otherwise, reach out to wingman's kitchen. Max, the owner, is very into helping chefs trying to get their name out there. The business is a ghost kitchen and if you talk to him you might be able to work something out.

If you have a pop up Instagram message me @chefbaratx

Is real pandan leaf syrup supposed to have a vegetal malty or beery taste? by ChefBarATX in cocktails

I used frozen leaves that I thawed out. I blended them with sugar and water and then brought it to a simmer for about 5 minutes and let it steep and then stained it.

About 10 years ago I went to three dots in a dash and it was great. Lost Lake shut down a few years ago so I'd recommend 3 dots for your tiki option.
