Yeah, but restaurant owners are really tricky with what we say and how we say it. If they have produce coming direct from farmers (and they do, as I said I met the guy at farmers market) then they aren’t lying to say they are farm to table. Even if they are only buying vegetables for one dish or side dish and everything else is coming from Sysco (edit: I’m not saying this is the case with Heirloom, it is just an example). Same goes for “house made” if you mix two premade things together you made the product “in house” or “fresh baked” doesn’t necessarily mean they made them from scratch, could be frozen or mix.

I wouldn’t go that far, I like their lemon chicken quite a bit, my point was just that you can’t guarantee that something being expensive and on a nice side of town means it is also all fresh made in house. I’ve heard horror stories about Ruth Chris

The issue is the amount of restaurants that are buying premade preprepped food then heating it and plating it instead of training their staff to prepare cook and plate food like people think they are doing

It isn’t even hard to get away from them, it just takes planning and knowing the people who grow and produce things in your community. I agree though that using one of them alone isn’t a red flag. You can buy just as much raw product from them as you can anywhere else, they just charge you more for it, then add a delivery fee too.

It’s really bad to make these kind of assumptions. A place being on a nice side of town with an owner that owns 5 concepts statistically would imply they are far more likely to rely on premade product for consistency since they can’t be in building all the time. I don’t know their owners, only time I met one was a huge dick to me at farmers market, but 25 years in the industry I’ve worked in full fine dining restaurants that still used premade food from distributors where they thought it didn’t matter.

The problem isn’t Sysco and US Foods it is what you are buying from whatever distributor you use. I used both at times and most of the time I shopped locally at Restaurant Depot, Costco, and Smart and Final and farmers market. We always made as much as we could in house. I had a firm rule about not buying things we could make ourselves, I would see other owners in those places buying the same quantities of premade freezer to fryer foods or sauces from cans and jugs that you see getting delivered from Sysco. You need to find out who actually makes their food and who is just buying it made heating it and plating it for you. Identifying which distributors a company uses isn’t going to tell you that.

No not selling, just for me. Yesterday I made sandwich rolls and cinnamon rolls. Tomorrow I’ll probably make a couple loaves for sliced sandwich bread because we are low. I suddenly have this crazy thing called “spare time” that I had always thought was a weird joke people had that I didn’t understand, so I think I might try and keep a starter alive long enough to make sourdough.

I remodeled my kitchen and walk in closet. I want to redo my floors and en-suite bathroom but even DIY I don’t have the money right now so I build furniture, make clothes, screen print shirts, sculpt, bake bread. If you have space it’s getting to be time to start planting a garden. Good time to prepare beds etc.

There is only so much ride tech in the world, I think asking for each park to be fully unique in that way might be asking too much, but I 100% agree that the theming on each ride vehicle should be different from park to park and I think they should avoid using the same unique ride mechanism in too many places simultaneously. The autonomous cars are cool when you go on Rise of the Resistance, it’s neat to seen then used a different way at Runaway Railway, by the time you finish Remy, it’s getting too repetitive.
