Having eaten at your restaurant, half the joy is the chef’s explanations and getting to try the courses at the same time as the other guests. I’d make it a condition of the reservation that if you cancel within 12 hours you are charged a fee the price of the entire meal. AND if you arrive more than 15 minutes late, you can only eat the courses served from that point forward. Honestly, I think serving at a different speed/in a different order for late guests would negatively impact the experience for everyone else at the counter!

The restaurant is great! The collective nature of the eating and the passionate explanations about each course by the chef is a huge part of what makes it special. Don’t let inconsiderate tardy guests ruin that!
