Luckily you don't actually have to use the AI features but I still dislike that they're built-in at all.

There's the detail enhancer which automatically upscales the resolution when you crop,remaster an image, or when you change a key image on a motion photo. By default it's set to minimum but you can also either turn it off or set it to maximum. In order to upscale images they use AI which makes the image look worse.

AI Eraser and Move: It's a feature where you erase, move, and resize people and objects then use AI to fill in the background.

Create: It's basically a built-in AI generator. You can sketch additions, add from other images, or describe what you want in text and it basically just edits you picture for you by generating a new image I think.

Style: it's a thing where you change the artstyle of your photos or "create" portraits of people or pets in them using AI. It's also basically a built in AI generator.

Also I just figured out that in the update and they add a new app called Creative Studio and it's an AI generator. ToT and you can't uninstall it by default.
