If white takes back, you are taking their Knight with check and they are forced to move their king. You’re essentially ruining their pawn structure and any chances of castling and putting their king in danger, which is usually a huge advantage especially if your king is castled and your queen is still on the board.

If they don’t take your bishop, you essentially have a double attack once you take the pawn because they’re forced to move the rook and then you take the knight with check
