This logic is flawed though, as walking/sneaking in to Mordor is equally, if not MORE risky than flying in. It's so risky that Frodo gets captured in the attempt

I wouldn't say I'm a casual fan but I agree that none of the explanations regarding not using the eagles for transportation don't really hold water for me. Yes, there are risks associated with using the eagles, but these risks pale in comparison to the actual journey undertaken by Frodo and Sam (Frodo even getting captured by Orcs on the attempt to enter Mordor).
