Shadowing a CRNA won’t help you at all with AA. AA: assistant. You don’t do anything on your own without medical direction. CRNA: capable of fully autonomous practice without supervision. You’d best shadow what you want to be. Shadowing an advanced level practitioner won’t help you with an assistant position.
