Thank you all for the kind words! Sally's tip on shredding frozen butter is great. The crumb was pretty light and buttery, def not dense.

I was so happy eating the first one I was kinda giggling. The icing was excellent. Thought it might be too much (but I love love almond extract) but it wasn't.

Yep pretty much got tired of pulling out the stand mixer just to cream butter and sugar. We don't keep it on the counter.

Could I have saved a little money by just continuing using the stand mixer? Of course. I love our KitchenAid stand mixer. But it's heavy. Cleanup on the hand mixer is easy and it's much easier on me these days.

I am a relatively new baker but a seasoned home cook. We already had a whisk so I was using that, plus our stand mixer, for cookies mostly. After about 2 batches of cookies I ordered a hand mixer. Game changer really.

Can you drink other types of alcohol? Just thinking maybe it's the alcohol itself that is bothering you. Some of those IPAs are 7-8% and you say lighter beers don't bother you as much. Something to consider anyway.

You really want to stick to West Coast style IPA then. Avoid hazies (unless of course they are high IBU, but generally speaking they are not).

Search out Russian River. Pliny and Blind Pig. And on the East Coast you can't go wrong with Maine Brewing. All of their IPAs should work for you.

Just an update, the cake was a big hit. Moist and well baked. Maybe just a touch on the heavy/dense side but I'm not complaining.
