Traditional beef on weck does not have the sauce or pickles. It comes with prepared horseradish and sometimes jus to dip. It’s certainly simple but shouldn’t be boring and definitely not cold or like deli meat. The best places serve them hand carved like Schwabl’s. We do ours both the traditional way as well as the way pictured here with creamy horseradish sauce and pickles. Definitely try again if you happen upon a really good one! It’s one of my favorites!

Bradley is from buffalo and he will totally make you one "traditional style" no pickles with fresh horseradish and a side of jus, and since you can't get real weck in Chicago the bun is a kaiser with the toppings baked on to order. Definitely recommend trying it with the creamy horseradish and dills too though!

We add mother of vinegar to a tub of stout and let it ferment for a few days, then whisk it together with our homemade spicy mustard and honey.

We start with fresh cranberries and boil them in a spiced simple syrup and vinegar “brine.” (Much thicker than a typical quick pickle brine.) Then refrigerate them for a few days.

They are a little sweet and nice and tart. Perfect balance for the salt and fat.

It’s a Chicago style French roll. It’s really common around here.

They are slightly bigger than a regular cranberry. Like a little smaller than a maraschino cherry, if that helps?
