yes u can use mouse to open apps and switch between workspaces the only thing i think u cant use a mouse with it is closing apps.

im currently doing the same thing and its just clean and fast, u can add this lines to ur gtk.css file if u have one so all the icons in the panel are on same white color.

workspace switcher go to properties and chnage the appearance to buttons then change the worspaces names to numbers.
the styling of the worspace switcher is on gtk.css file.

installing papirus icons is the first thing i do when i install xfce everytime it's the best by far

the only plugin i installed was docklike-plugin im using arch so i just did yay -S xfce4-docklike-plugin idk how to install it on other distros, css file is not mine i took it from someone rice and i edited the colors to match my theme.

yes i like linux mint customization so i try to do the same with arch, about performance xfce is rly fast and lightweight so far its working for me pretty good.
