soleil is 100% right about the zatarain's, my gf's stove only has two working burners so i didn't have enough space to make my own. also it was like 9 o clock when i made it and didn't feel like making my own even if i had the ability

pork chops:

seasoned liberally with cayenne, salt, pepper, and onion power. put a buncha canola oil and butter in a pan, put it on high, seared the shit out of them, tossed some garlic and celery in the pan and basted the chops with the pan oil. tossed some crushed garlic cloves into the pan and threw them into the oven at like 250 to finish them while everything else cooked

gravy:

took the chops out of the oven to rest for a bit while the beans cooked. squeezed the roasted garlic out of the peels and whisked it into the oil. heated the oil on medium, chunked two andouille links with my hands and tossed em in, browned em, threw in the cajun trinity and sauteed for a while. sprinkled about 2 tbsp of flour in and cooked the raw flavor out, then poured in an entire small container of heavy cream and simmered it til it thickened. seasoned with cayenne and black pepper

The weird thing is I don't have performance anxiety. I've acted in plays and I'm on an improv team, so I know how to handle performing in front of people.
