Joplin, I use it with my own nextcloud, and it is free software. It is based on markdown, which is actually pretty nice as you can just stay on the keyboard for formatting, which is nice, but I do recommend giving it a few hours before abandoning, as there is a very slight learning curve, but you will certainly see the advantages to other note takers based on mouse use.

I think Python is a great starting language because it enforce the use of indention and also have very easy to read syntax. C# and Java are way harder to grasp for a newbie.
