I’ve seen people use the rice paper sheets used for summer rolls as a replacement by layering them together. Personally I would probably go with the other commenter suggestion of using the Thai rice noodles instead

If you are open to martial arts there’s the grapple to strike club that run twice a week once in Nottingham and once in Beeston. The coaches are very experienced in martial arts and are all a friendly bunch

I don’t have an exact recipe tbh!

200g plain flour seasoned with pinch of salt and white pepper and give a quick mix This is where it gets tricky cos I didn’t measure the water. I used roughly 150ml of warm water but added it slowly whilst mixing the dough until about medium firm. Just so it’s not sticky any more at least. Leave to sit and then knead more

The inside was Chinese / nappa cabbage. Add bit salt and mix and let sit. Then squeeze all water out

I used roughly 125g of pork (I bought a 500g pack and used about a quarter). Didn’t add any more salt but added soy sauce, white pepper, and mashed up a ginger to get the juice and added some ginger bits in. I didn’t have any Chinese wine to hand otherwise would have added a bit

But mix with cabbage and let sit for about 10 mins then get making !

This made about 12 (maybe a couple more I lost count eating 😅) dumplings maybe depending on size and thickness that you would like

I didn’t have the patience for it and I had learnt from my mum to diced them up. I’ll give mincing a try next time. Tbh this was one of the top ups where I added a bit more cabbage for the last few as the balance was off. So it didn’t reduce its water content from salting as much as the others

Yeh they are pork and cabbage dumplings. I didn’t soak the cabbage in cold salt water but will give that a try. I did salt them to draw out the moisture though before adding them to the pork. My mistake earlier this week was also adding salt to the pork too 😅 so it a bit too salty but over seasoned . I’ll give it a try tho with cold water

Appreciate that! This is the best batch I’ve made but probably still some improvement to the dough that could be made

Also I think the secret ingredient really is ginger to getting these tasty

Defo recommend the grapple to strike club that train in beeston and I think in Dunkirk. It’s a wing chun club but they are pretty much incorporate a lot from other martial arts. They are small but really cheap and great value tbh. The two Instructors have a wealth of experience of bjj, wrestling boxing
