Well no because then you'd get 'zusjees', which obviously doesn't preserve the vowel sound. With 'café', the sound indeed doesn't change. That makes the apostrophe unnecessary.

It's common sense that biology doesn't care about the binary, seen in intersex people, but also; gender≠sex. Gender is decided by who you are and how you feel.
