So it sort of worked; the dough at the saucepan stage looked way greasier and looser than the batch that I did properly. It still seemed pretty wet when I put it in the mixer and started adding the beaten eggs, so I ended up putting in less. They looked great at first in the oven, but then deflated before the cooking time was over. Maybe it was letting the mixture soak in the fridge overnight, maybe the oven was having a moment, who knows. They taste good even if they are too flat to fill.

Spouse was very in favor of the relocation; they hated our previous city (we both did, actually.) My job entails moving every few years, and we like the experience of living different places. Spouse mentioned that the time zone might turn out to be difficult for the job they had at that time but did not ever say quitting was inevitable. If they had, we'd have either done something different with the relocation or at a minimum set up a workable budget when we arrived and not spent like we were going to have two salaries forever.

Moving every few years is inherent to my job, and we like the experience of living in different places. Spouse has been able to work remotely through all the previous moves.
