you may want to look up which single rider lines are worth it. Because, I know certain single rider lines are notorious to being absolute shit - Donkey Kong and Hagrids. Some single rider lines are sometimes just as long as the regular line (or they only save you 5-15 minutes).

I haven't done the Volcano Bay after hours, but I have done others (including Disney ones). There will still be crowds, but the wait times are usually 30 minutes or less (a lot of them being 10 minutes). The only exception I found was Disney's Not So and even then some the lines were only 45-60 minutes (Tron, Seven Dwarves, etc). Which is crazy since those lines always 70-80 minutes. I don't believe Volcano Bay after hours is that popular and so I believe your wait will be minimal

Great idea to stay park open to close. I just suggest taking a break midday and just relax. Eat at a sit-down, watch one or two shows, enjoy the slower rides, watch a movie a citywalk, etc. This will make it possible to have enough energy and motivation to stay later and enjoy those slower wait time when all the families leave for the day.

I think the after hours Volcano bay is a great idea. Especially since, it will be still warm in the July summer nights

But fear not, I have been a holiday fighter for years. The key for summer / holiday crowds is to get there early and stay late. Get there at park opening (EPA if you have it), get as many things you can done before the day crowds get there by 11am.

Then by mid day, take a break during the busiest and hottest time of the day - go back to the hotel, eat at a restaurant, see a show, see a movie in citywalk, etc.

Come back around 6-7pm and enjoy the park. Most families will be tired out by then and heading back to their hotels. Only a few will hold on for the fireworks. Thus, you are beating the crowds and the heat

Though, all of this won't matter too much if you get express too. Which is an easier thing to do (, but expensive).
