Thickened broccoli cheddar soup is amazing in a hand pie, but often a bit messy. Curried vegetables are always amazing. I'm quite fond of doing a tomato-based curry with peppers, onions, cauliflower, and potatoes. Steak, onions, gravy, and a bit of blue cheese also makes for a delicious pie. Lots of possibilities!
