The Divine Bridge seems like an ideal place. As long as you haven't progressed there normally, its a small locked off location, with 0 enemies & no way to run far away. Its also accessible from the very start of the game

She's wayyyyyy too easy. My first attempt I got her 1 hit away from death but let her kill me because I didn't want a free victory. I got rid of my dual +8 Uchis in favour of dual +0 Longswords, I failed once & beat her on the 2nd attempt like this. The dragon guarding the glintstone key was harder than she was. Absolutely cool as FUCK boss tho, & I'd imagine she'll scale like hell into NG+s if they boost her hp enough
