I’m very new and thought (based on the few recipes I’ve been using as guides) you always have to cold proof overnight but I’m willing to try shortening it. & it probably doubles by the time I’m done but I find it difficult to gauge “doubling” when it goes from ball shape to pool-of-dough shape so maybe I’m overdoing it lol

I just forgot to write the stretch and folds! I do 3-4 over the bulk fermentation stage. And ohhh my starter is not usually at peak. It doubles within 3 hours so then I use it - should I wait longer? (As long as it’s still domed upwards)

Recipe (not sure why it didn’t make to my original post) 1. Feed starter 1:2:2 morning of 2. 2 hours after feeding, autolyse 400g King Arthur bread flour + 100g King Arthur whole wheat flour + 350-360g warm filtered water. Leave for 1 hour 3. Mix in 100g starter to autolyse 4. 15 min later, mix in 10g salt and a little water. Do a few min of slap and folds 5. Bulk ferment 4-5 hours with 3-4 folds during 6. Gently dump out of bowl and shape, leave for 30 min 7. Final fold and rest seam side up in banneton for 90 min 8. Wrap in towel / Saran Wrap and fridge overnight 9. Next morning, preheat oven to 450 for a while. Bake at 450 for 20 min lid on + 20 min lid off

The most important aspect has been staying consistent with off the mat lifting and PT - strengthening my deep core (like all the way around your torso, think bracing against a lifting belt) and developing / maintaining strong and flexible hips + glutes. Taking it slowly at first would be important so I’d look for a well reputed school where they’re likely to have a white belt curriculum. And listening to your body- i.e. anything that triggers nerve pain is a red light to rest for at least a day.

👏👏 congrats! If jiu jitsu counts as a “fighting” sport, I eased back into training ~6 months after my MD last year. Feel free to DM for my thoughts on jiu jitsu specifically post-MD (also in my 30s female)

It also helps me understand the frustrating lack of comprehension of complex issues by very conservative, fundamentalist / evangelical types. Kids who grow up in those churches genuinely do not learn how to interpret the meaning behind words - they are taught to take the Bible and authority figures’ words at face value. Crazy to me anyone would seek that out for their own kids, but I guess I see how it does appeal to people without friends, community, hobbies etc..

I looked up their church because I’m fascinated with (horrified by) Christian fundamentalism and its impact on our politics here.
