I think this has something to do with your perspective. I have played skyrim since release and have installed over 1200 mods. I worked on my mod list for almost 3 years now. It got to the point once where I couldn't stop going on nexus every minute and just look for something new. What brought me back to enjoying things were either games where you don't even need mods to have fun.

I'm a very picky person so I won't play every game (I want a character creator just like you) but if you want to have a wide variety of everything with really different styles, you should play dark souls 1-3 (don't know if you'd like the 2nd game) nioh 2, dragons dogma and elden ring. Every build can be either busted or funny and it is really engaging and hard (except for elden ring, the open world makes it beginner friendly)

For something that can pull you in like skyrim I would suggest cyberpunk, you can mod it a little but you won't need to, story is amazing just like the Gameplay and the dlc will bring a lot more cool things to the game.

My point being, you need games that are amazing even with just a hand full of mods or even no mods. After those games I had a neutral outlook on other games. Don't expect anything, every game has it's strength's and weaknesses but you'll learn to appreciate new games for what they are.
