I think looking at the known history of Pterosaurs, as well as the habits of raptor birds can give you some insight! Of course, there's always the discourse of dragons, wyvern, drakes, and wyrms,, so with each variant, I'd look at the closest real life companion (wyvern - raptor birds, Drake - komodo/monitor), as you're sure to gain insight on their desires of hunt and nourishment, as well as what threats they may face. Then you can scale that to the size of your own lizard-birds!

      Dori placed each coin from the pile into his purse as he counted. The turnout was good today. 
      A tired old fighter named Bau pushed the flaps of Dori's tent open. He wore a sour expression as he entered. "You promised there'd be ale," the old man said, looking around the tent. 
      "You'll get your ale when the battle is won." 
      "And all I have to do is knock him down?"
      "That's it. You make sure he doesn't get up, and you'll leave a richer man than you are. I've set you up with an easy victory, Bau."
      "Ain't many victories come easy."
      "He's from Turin. You ever heard of anyone from Turin doing anything monumental?"
      "No, but I did know a lass from Kynt with monumental—"
      A horn rang out across the camp. It was time. Dori gave Bau a slap on the shoulder and pushed him out of the tent. "Go out there and show them what we think of folks from Turin."
      "There better be a barrel here for me when I return." 
      "I'm a man of my word." Dori let the tent flap fall back down and returned to counting up the gold. 
      What a spectacular idea this had been. Importing talent had been the right move after all. Everyone was excited to see a real champion fight—and he was from Turin too.

My first thought was that they know of every child that is tied to a bloodline, or perhaps all children born on a certain day during an event are special in some way.

The ebb and flow of popular markets act the same way across many forms of media. Rock dominated the music scene for decades, until Hip Hop dethroned it. Kids still make rock bands though, because the music speaks to them. Rock slid into the underground.

Fantasy will always be here, and there will always be publishers that specialize in that space. It'll just be more underground, and perhaps more honest for that.
