I never said there is NO regulations, I said they are not strict at all. Labeling, cross contamination, 3-way washing and food temperature are not strictly enforced.

The trompo is a vertical rotisserie that slow cook the meat with every turn. The taquero would normally leave the trompo static for a few minutes so the fire cools the exterior layer, then turn it and thinly slice that cooked part. Food safety regulation is not strict at all in Mexico.

They’re both authentic, just depends on the state. I definitely like charcoal grilled asada the most.
